Gluten-free, vegan soft pretzels-Part 2
Here is part two of the soft pretzel saga! This will give you choices if you have a gluten-free flour preference. The only difference between this recipe and the recipe in part 1 is the flour! The flour I use in this recipe is different (it has different ingredients) and also has the xanthan gum incorporated. This dough is tasty, no after taste but the dough is a little harder to shape and a little bit chewier than the other recipe in part 1! Try both and pick your favorite :)! The best-looking shape and easiest shape to form for these pretzels are a simple twist. I used the excess…

Gluten-free, vegan soft pretzels-Part 1
If you’re new around here, we have a number of food allergies/sensitivities in our home and I am always making and creating new things so that we can eat the yummy foods we love, without the harm. It’s a journey, not a destination, hahaha. This week, I created two soft pretzel recipes that both do not have gluten and both are vegan. The difference? The flour used! I found that this recipe had dough that was a little bit easier to work with, but it does have an after taste that I didn’t quite love. Other than that, the recipe also tastes the most like gluten soft pretzels (if you…

Gluten-free, Vegan Bread-Pudding Recipe
This is the most tempting dessert! We aren’t letting allergies stop us from having our favorites! This recipe is quick, easy and one of the best things you can imagine! This is a total crowd-pleaser. If you have never tried bread-pudding, what are you waiting for?! Bread pudding was created long ago, something to make when you had stale bread that you didn’t want to waste. You don’t have to have stale bread, but if you do, this is your recipe! No need to waste a golden opportunity. Use whatever gluten-free bread load you have on hand, homemade or otherwise. I had help preparing the pudding. Kids love tearing the…

Beet Juice Red Velvet Cupcakes
We have a birthday party today and I wanted to whip up some red velvet cupcakes. But, I had no beetroot powder or red food coloring! I am always kind of shocked at how much red food coloring red velvet cupcakes take, so I was somewhat happy that I didn’t have any on hand. I made up this recipe and the cupcakes turned out pretty good! I really love how the color turned out, but it’s not the traditional bright red that is usually associated with red velvet. I love the natural-looking color better but if you want a deeper red, try adding some red gel food coloring. The recipe…

Van’s Chocolate Chip Cookies
I absolutely LOVE chocolate chip cookies! I have had many chocolate chip cookie flops in my day! I personally hate when my cookies go flat! Has that ever happened to you?! I set out on a journey to make the best recipe and this is the result! The brown butter in this recipe really makes them special! It gives the cookies and amazing flavor! Some tips when making these cookies: If you burn the butter instead of brown it, throw it out! That will not be a pleasant taste! If you are unsure about browning butter, simply melt the butter. I urge you to try your hand at browning butter!…

Van’s banana bread recipe
My family loves banana bread! The smell of fresh banana bread is one of the best smells in the world! This bread is soft and delicious and will make your banana bread fantasies come true! Mixing in each egg, one at a time until fully incorporated is important. Not over-mixing is just as important! One of the biggest things that can affect a bake is oven temperature. Make sure you know your oven and how it bakes. I have had things not turn out and I bought an oven thermometer and realized my oven was getting up to proper temperature! Here is a post all about oven temperature. I love…

Delicious Dairy-Free {vegan} Frosting
My family loves cake and frosted cookies, but we are dairy-free. My family LOVES this vegan recipe. It will harden because it is a shortening frosting. While I prefer butter in recipes because it is more natural, it’s not healthy if you have a milk intolerance. I like the flavor on its own, but add flavorings of your choice. Start with 2 teaspoons of vanilla or some other flavor. If adding flavor, make sure to do so before adjusting the thickness with the oat milk. Adding flavor at the end will give you a thinner frosting. Add more powdered sugar to thicken, more oat milk to thin. Be careful not…

Neighbor Gifts-Once Again!
This year I got the most amazing tasting chocolate for all my baking. I am super excited about it! I have to find a way to store it really well because chocolate takes on other flavors and smells from things around it. I haven’t figured out the best way for me to do that yet but I am working on some ideas. In the meantime, I have made some amazing tasting things so far! My neighbor gifts turned out amazing! PS, you can make neighbor gifts anytime of the year :). It’s so fun to get and give treats! This chocolate also makes the most amazing brownies ever! Happy baking…

One of My Favorite Holiday Traditions
The night before any big holiday, I pull out all the baking supplies because it’s CINNAMON ROLL TIME! My absolute favorite cinnamon roll recipe is here: Cinnamon Rolls. It might seem like a lot of work, and it kinda is, but trust me. IT’S WORTH IT! You need to plan time ahead to make this recipe. This is a picture from the night before. You need to give yourself several hours the night before, but don’t worry, it’s not a lot of work for hours. Just rising, resting, turning that takes time. The next morning, you will need to leave yourself time as well. With letting the dough come to…

Kitchen Ingredient Cult Favorites
Sweetex Shortening. This is a high-ratio shortening that is great for baking because it has a lower content of water. I love making frosting with this shortening, it turns out great! It is a baker’s favorite for a reason. The only way to get it is to buy a large amount, so if you don’t plan on using that much, split it up with some friends. I purchased several storage containers from Costco and I use them to store the shortening in. Olio Santo California Extra Virgin Olive Oil. I read once that if you don’t like olive oil, then you probably aren’t using a good one. Finding a good…
